چکیده

Abstract This research presents the results of a comparison assessment cholesterol content, fatty acid profile, and atherogenic (IA) thrombogenic (IT) health lipid parameters four dry fermented sausages produced from Mangalitsa Swedish Landrace pork meat. The highest level was found in Sremska sausage prepared meat (64.92 mg/100g). Polyunsaturated (PUFA) levels were considerably greater than other kinds. main cause these variations higher overall n-6 PUFA concentration. made had monounsaturated (MUFA) unsaturated (USFA). saturated (SFA) Fermented show better indices, (IA), (IT), PUFA/SFA ratios.
